Amaranth Granola is a nutritious mixture of puffed amaranth seeds, pecans, and pumpkin seeds, flavored with cinnamon, maple syrup, and vanilla extract. It is much better than store-bought granola, as it is fresh, made with high-quality ingredients, and free of preservatives. You can always adjust the ingredients to your preference. You can add it to your Greek yogurt, smoothies, milkshakes, or porridge or munch on it as a healthy snack.
Storage Suggestions
Cool the granola completely and store it in a clean, dry, airtight container at room temperature. It will last for 3-4 months. Use a clean and dry spoon for every use to ensure the granola lasts longer. You can use walnuts if you can’t find pecans or find them expensive. Maple syrup adds a subtle hint of sweetness. You can use honey (not vegan) as well. Cinnamon gives it a spice that goes well with the sweetness of maple syrup. Use a good quality vanilla extract for a beautiful flavor and aroma. I prefer coconut oil, which is healthy and the best choice for making home granola. Be careful while baking the granola. Once it has baked for 12 minutes, please keep a close watch as it burns in the blink of an eye. Granola will crisp up as it cools down. Make sure to cool it well before transferring it to the jar. You can add other ingredients to this recipe to taste. My favorites include chocolate chips, shredded coconut, butterscotch chips, dried cranberries, quinoa, cocoa powder, chia seeds, and pistachios. It also freezes well. Store in a freezer-safe container or ziplock bag and freeze for about six months.
