Beetroot and Coconut Burfi

I am hunting for easy diwali sweets and snacks to try and share it here before diwali..I have made quite a few recipes for diwali, and i will be sharing them soon.. Similar Recipes, This one is quite a different barfi recipe, it has beetroots added in it, normally beetroots are used to make halwa, this time i made it into barfi. For burfi we need to add extra sugar which makes it set like a barfi. I used beetroot in this one, you can use carrots instead of beetroot. The only thing is you have to cook it till it leaves the sides of the pan and ghee starts to ooze out from the pan.
