Beetroot Idli
Healthy and easy beetroot idlies which looks so colourful. This is a great recipe to put in your kids lunch box. Today’s lunch box—>Beetroot mini idlies aka pink idlies (recipe below)—>Paneer bites with some ketchup. Recipe which is linked, i used tofu. You can use paneer instead of tofu. On snacks box—>Boiled salted sweet corn I added grated beetroot in idli batter and made mini idlies. I cubed paneer into small bites. Mixed salt, pepper and oregano with some wheat flour and made into a batter. Dipped paneer in this and coated with some breadcrumbs. Fried those till crispy. I add some salt to water and add frozen sweet corn in them and boil for 1 min. Drain. This lunch is packed with carb, Fiber, calcium, fat, vitamins. Beets are excellent source of folic acids, manganese and potassium. Sweet corn is rich in carotenoids. Pin Hope you will give this a try and let me know how it turns out for you.
