It is something delightful biting into a tender, fluffy, fresh dinner roll just out of the oven.  Their scent is so inviting and comforting, and the taste is undeniable!  It’s crazy that something so simple can taste so delicious.  This recipe is my new favorite roll recipe!

Sweet Potato Dinner Rolls

So, once again I had some food left over, in this case, sweet potatoes, and I hate wasting so I had to think of something to create with them.  Yesterday I made sweet potato cupcakes and those were delicious, but this time around I didn’t want to make another sweet from sweet potatoes.  These rolls are amazingly tender and perfectly moist in texture.  There is no overwhelming sweet potato flavor in these, just a hint of sweetness.  They are wonderful for a holiday feast or fancy dinner, or they also make for amazing turkey sandwiches.  These can even turn into a dessert with a fair spread of whipped brown sugar cinnamon butter (I love them this way =). A drizzle of honey is never a bad idea, either!

Sweet Potato Roll

These rolls feature basic ingredients and help you incorporate more nutrition and repurposing leftovers is a responsible way to curb food waste. I also love how simple these rolls are to make!  No rolling pin is necessary for these instructions—just punch down the risen dough and divide using a very sharp knife blade or eyeball it. They’re moist enough that you don’t need parchment paper and could even use a basic baking sheet. You can use basic active dry yeast, bread flour, and mashed sweet potato (you can process sweet potato strips or fries, too) in your stand mixer to make a vegan base for dinner rolls that everyone will love. They pair perfectly with any type of protein, but I recommend using them as buns for leftover Thanksgiving turkey sliders!
