Calamansi Juice
Calamansi is very new to me, when I saw this citrus in my super market immediately I picked a bag. When I opened and tasted this fruit, it was too sour but in a good way. Calamansi has a natural aroma to it which was wonderful. I used few fruits as marinate for my grilled chicken and remaining I used to make this refreshing juice which was very refreshing.

Calamansi also known as filipino lime, limao kasturi. It is native to the Philippines, Indonesia in Asia as well as southern China and Taiwan. Calamansi is ubiquitous in traditional . It is naturally very sour, and is used in various condiments, beverages, dishes, marinates and beverages . Calamansi is also used as an ingredient in Malaysian and Indonesian cuisines.

Calamansi is also used to make desserts, baking, cakes & muffins.
How to Make Calamansi Juice (3 Easy Steps)
Extracting & Straining Juice - Cut calamansi in half. Squeeze the juice from the calamansi. You can use citrus squeezer or just use your hands. Strain the juice through a sieve to remove the seeds. Making Juice - To the calamansi extract, add in sugar and mix till sugar is melted completely. Pour in cold water and mix well. Taste and adjust the sugar and cold water. Serve - Fill your serving glass with ice cubes. Pour juice on top of ice and serve.

1)Take your fruit. Wash it well and pat them dry. Some variety of calamansi is green in colour and some orange in colour. You can use any one of the both variety. 2)Slice the fruit in half. The flesh will be light orange in colour with a strong citrus and tart taste.

- I used my hands to squeeze the juice from the calamansi. The fruit has a thin skin so it is relatively easy to squeeze it with your hands. But you can opt for a handy lemon squeezer too. 4)After you squeezed your juice. There will be lots of seeds in the juice. Make sure to use a strainer to strain out the seeds. Reserve the calamansi juice in a pitcher. Pro Tip: Calamansi pulp and extracts are very sour, so for making a cup of calamansi juice you don’t need much pulp. A little goes a long way.

5)Add in sugar. Since the fruit is very tart, you might need to add more sugar. Refined white sugar is best for this juice because it won’t alter the beautiful yellow colour of the juice. But you can use honey or maple syrup. 6)Pour in cold water and mix well. Taste the juice and adjust water and sugar accordingly. 7)Freshly squeezed calamansi juice is ready to serve.
