This is a simple rice dish in which chicken is cooked in flavourings like ginger, garlic, green onions, chillies which creates a stock. Later rice is cooked in the stock which gives such a amazing rice dish.
About Hainanese Chicken Rice
Hainanese chicken rice is a dish of poached chicken and seasoned rice, served with chilli sauce and usually comes with cucumber garnishes. It was created by immigrants from Hainan in southern China and adapted from the Hainanese dish Wenchang chicken.

Chicken
Use bone in chicken for making this dish. Flavourful chicken stock is very important for making the rice flavourful. Bone in chicken adds for maximum flavour,.
Rice
Traditionally the chicken skin is removed and sauted in pan till the chicken fat from the skin is rendered. Rice is stir fried in that chicken fat and cooked in the chicken stock.
Flavourings
Garlic, spring onions (scallion) and ginger plays an important role in making of this dish. You can add spices like star anise, cinnamon and whole peppercorns too.
Ginger Sauce
This dish is flavourful and pretty mild in taste. Spicy ginger sauce is made by grinding chillies with garlic, ginger, sugar and vinegar. This sauce adds the spicy kick to the dish. Tips & Tricks
Make sure you use bone-in chicken for getting a flavourful chicken broth. If you can remove the chicken skin and render the fat from it in a pan and fry the rice in it to get maximum flavour. You can use store bought chicken stock or use stock cubes for instant version.
