Pin Mirror Cakes are quite popular at the moment. Everybody have their own version of it. This is my version. It takes some time to get the perfect result. This cake has certain components in it.

Chocolate sponge cake : Easy and basic chocolate sponge cake which is pillowy and chocolaty at the same time. Whipped chocolate ganache: Dark chocolate is melted with cream to make ganache. The the cold ganache is whipped to get light and airy and creamy. Mirror Glaze: Gelatin and cocoa based chocolate shiny glaze for the cake.

More Tips

Make sure you make the frosting and mirror glaze a day in advance. You can even bake the cake 3 days in advance. Wrap the cake in plastic wrap and place it in fridge till needed. The frosting can be stored in fridge for upto a month. Mirror glaze can be stored in fridge for a month. Instead of dark chocolate in the frosting you can use milk chocolate for a sweeter version.

FIRST CHECK OUT MIRROR GLAZE RECIPE & WHIPPED WHITE CHOCOLATE GANACHE RECIPE

Pictorial: 1)Take all your cake ingredients. Pin 2)Take flour in a sieve Pin 3)Add in cocoa powder. Pin 4)Add in baking powder Pin 5)Add in baking soda Pin 6)Sieve it well. Pin 7)Take oil in a bowl Pin 8)Add in milk Pin 9)Add vanilla. Mix well and set aside. Pin 10)Take eggs in a bowl Pin 11)Whip till fluffy and frothy Pin 12)Add sugar little at a time and keep whipping. Pin 13)The mixture has to be thick and fluffy. Pin 14)Remove at this stage. Pin 15)Add in the dry ingredients. Pin 16)add in the wet ingredients. Pin 17)Fold gently Pin 18)Pour it between two round baking pans lined with parchment paper. Pin 19)Time to bake. Pin 20)Now it is baked. Set aside to cool. Pin 21)Unmould and set aside. Pin 22)Make simple syrup. Take sugar and water in a sauce pan and melt. Set aside to cool. Pin 23)Brush the syrup over the cake. Pin 24)Spread whipped chocolate ganache on top. You can use any frosting. Pin 24)Spread evenly Pin 25)Top with another layer. Brush with simple syrup. Spread frosting. Pin 26)Spread evenly around the sides too. Place the cake in freezer for 30 minutes. Pin 27)Dip a knife in hot water.
