About Egg Bhurji (Anda Bhurji)

Egg bhurji (Anda bhurji) is Indian-spiced scrambled eggs. A spicy onion-tomato-based masala paste is made, and the eggs are scrambled along with the masala. This dish is popularly sold on the streets of Mumbai. The street vendors add a secret ingredient to their recipe that takes it to another level: Pav Bhaji Masala. In this post, I am sharing a recipe that will take you to the streets of Mumbai in the comfort of your own home. This gluten-free anda bhurji recipe comes together in under 20 minutes using minimal ingredients and can be served any time of the day with roti, paratha, bread, or pav. The Parsi version of egg bhurji is called Akuri. Although it uses similar ingredients, the two vary in taste and texture. If you are a vegetarian, do check out my Paneer Bhurji recipe. Variations

If you run short of time and want to make this egg bhurji recipe even more quickly, add the eggs to a bowl and whisk them nicely. Add everything else to the same bowl and mix well. Heat oil in a pan, add the egg mixture to the pan and scramble the eggs. Butter and Oil – The combination of these two adds a nice taste to the anda bhurji. Use any cooking oil that you prefer. You can replace butter with oil to make this dish dairy-free. Veggies – I have added the basic veggies, such as fresh tomatoes, onions, green chilies, and cilantro (fresh coriander leaves). You can also add finely chopped bell peppers, green peas, carrots, mushrooms, green beans, etc.  Adjust the green chilies as per your taste. Spice Powders – You will need basic spice powders like Kashmiri red chili powder, turmeric powder, coriander powder, and salt.  You can also use a little garam masala and black pepper powder to enhance the taste of the anda bhurji recipe. Pav Bhaji Masala is my secret ingredient for the best-ever egg bhurji. It makes the bhurji super flavorful. Others – You will also need fresh ginger, garlic, and freshly squeezed lime juice (or lemon juice).  Once the oil is hot, add ½ cup of chopped onions and saute until the onions turn translucent, stirring frequently.

Now, add ½ cup of finely chopped tomatoes and cook for another minute. Mash the tomatoes with the back of the ladle while cooking.

1 teaspoon coriander powder ¼ teaspoon turmeric powder 2 teaspoon pav bhaji masala ½ teaspoon Kashmiri red chili powder

Reduce the heat to medium-low. Add the whisked eggs to the pan. Note – If you like soft bhurji, cook the eggs until just set. Remember that they will keep cooking from the residual heat in the pan for some time. If you like perfectly cooked bhurji, cook until the eggs are nicely cooked. Add 1 teaspoon freshly squeezed lime juice and 2 tablespoon chopped cilantro and mix well. Serve hot. Whisking the eggs separately in a bowl before adding them to the pan makes sure the eggs scramble perfectly. For a heartier dish, add green peas or other vegetables like mushrooms, red bell peppers, green onions, etc. Top the egg burji with fried onions or toppings like chopped onions, bhujia sev, or crushed chips for extra flavor and crunch. Add a little milk while whisking the eggs for more fluffy eggs. To make a creamy version, add fresh cream, mayonnaise, and grated cheese once the anda bhurji is cooked and mix everything well.
