Eggless Bread Pudding
I love to have bread pudding every now and then when it is cold or raining outside. Specially this one is eggless and really easy to whip up. There is nothing comforting than a bowl of warm bread pudding. You can make this with regular white bread, I used my leftover Brioche for making this and it was so yum. If you want the classic bread pudding recipe, I have that covered already for you. A simple custard is made with milk, sugar, custard powder, vanilla and butter. Bread cubes is is soaked in the custard and baked till bubbly. I love to bake this until the top layer is crispy and golden. I also added nuts and raisins which makes it more tasty.

Bread Pudding is a classic comforting dish which is loved by everyone around the world. It is a recipe which is developed to use up leftover bread to transform into a delicious dish. . Traditional bread pudding is made with stale bread which is soaked in a vanilla scented custard made with eggs, milk, sugar, and cream which is then baked until golden and bubbly. I have already shared a classic bread pudding which is served with vanilla custard sauce. This recipe is developed for people who don’t eat eggs or prefer eggless desserts. The custard is made with milk, sugar, custard powder, vanilla and butter. Custard powder and butter provides the richness to the custard which imitates eggs. Once baked the bread soaks up the custard and turns caramelised which taste so delicious. You can never tell the difference. Personally I love bread based desserts, some of the popular ones are caramel bread pudding, no bake bread pudding and bread cake.

Eggless Bread Pudding Ingredients
Bread - You can use plain white bread for making bread pudding. But for real rich taste use some kind of enriched bread like challah or brioche bread. Also fresh bread doesn’t work better, you have to use day old bread which absorbs the custard better. Milk - whole milk has to be used for rich and creamy texture. You can use little cream along with milk for rich texture. Sugar - depending on the sweetness level, you can add more or less sugar. Instead of sugar you can use honey as well. Vanilla Extract - a splash of good quality vanilla adds so much flavour to the pudding. Butter - Since this is eggless, butter added in the custard helps with the rich flavour. Optional - I used sliced almonds, raisins soaked in rum in the bread pudding for different texture and taste.
Bread Pudding Custard (with & without Eggs)
Traditional bread pudding is made with stale bread which is soaked in a vanilla scented custard made with eggs, milk, sugar, and cream which is then baked until golden and bubbly. The custard is made rich and thick which soaks into the bread cubes and once baked it turns so creamy and delicious. Even though traditional custard for bread pudding is made with eggs, cream, milk and sugar. You can easily make it without eggs too. Also you can flavour custard with variety of ingredients like orange peel, lemon peel, cinnamon powder, cardamom. Custard with Eggs - Take milk, cream and butter in a sauce pan and heat it till the butter is melted. Take it off the heat. Now in a separate bowl take eggs, sugar and vanilla in a bowl and whisk well till combined. Slowly pour in the milk and cream mix and whisk well. This is your custard. Now add bread cubes in this mix and let this sit for 30 mins. Now pour this in baking pan, top with raisins and make sure it is immersed in the custard mix. Top with some more cubes of butter and sprinkle some sugar on top. Custard without Eggs - Even though the recipe is completely different from the classic. Making custard without eggs is easy. You have to use either cornstarch or custard powder for thickening. Also the butter added in the custard helps with the rich texture.
Important Tips for Best Taste
Day Old Bread - fresh bread doesn’t work better, you have to use day old bread which absorbs the custard better. If you don’t have fresh bread on hand, cut your bread in cubes and let it air dry for 2 to 3 hours at room temperature. You can even pop the bread in a 150 degree C oven and bake for 15 minutes till it is slightly dried. Time to Soak - once you pour the custard over the bread, let it soak for 15 minutes so the bread gets a chance to absorb the custard which makes it silky when baked. Meal Prep - you can assemble the bread pudding the day before. Cover it tightly with foil and place it into the fridge. You can bake it in oven when you are about to serve. Add ons - you can add chopped fruits like banana, berries or apples in your bread pudding for extra taste. Chopped nuts, pumpkin seeds adds crunch to the pudding. Serving - bread pudding taste best when served with vanilla custard, ice cream, whipped cream or caramel sauce.
How to Make Eggless Bread Pudding (4 Easy Steps)
Pre-Prep - Preheat the oven to 380°F / 190°C. Soak raisins in orange juice or rum for 15 mins till it plumps up. Cut your bread into chunks and set aside. Mix ¼ cup milk with 2 tbsp of custard powder till there is no lump and set aside. Preparing Custard - Take milk in a sauce pan, add sugar, vanilla and butter.. Heat the milk so that the butter melts completely. Now pour the prepared custard mixture in the hot milk and whisk constantly so that no lumps are formed. Now remove this from heat and set aside. Assembling - Take a baking dish and butter it slightly. Lay the bread pieces in the dish and sprinkle the raisins. Now pour the custard over the bread slowly so the bread absorbs the custard better. Press the bread with a spoon so that the bread absorbs all liquid. Let it sit for 5 minutes. Now sprinkle sliced almonds and a tbsp of sugar over the top of the bread. Baking - Now place the baking dish into the preheated oven for 45-50 mins or until golden and crispy on top. Remove this and let it stand for 5 mins. Serve warm with ice cream or cream and powdered sugar.
How to Make Eggless Bread Pudding (Stepwise Pictures)
Pre-preparation
1)Start by soaking golden raisins in rum or orange juice for 15 minutes. This step is optional, you can skip this if you want. 2)take custard powder in a bowl, add in ¼ cup of milk and mix till lump free. 3)Set this aside till use.
Making custard
4)Take 1 ¾ cup of milk in a sauce pan. I am using whole milk. 4)Add in sugar to the milk. 5)Add a splash of vanilla extract. 6)Add in butter. 7)Place it on heat and cook on medium heat till butter is melted and milk gets hot. 8)Add in custard milk mixture into the hot milk. 9)Whisk constantly so the custard is mixed into the milk and milk starts to thicken. 10)Now the custard has thickened slightly. Remove the custard from heat and set aside.
Baking bread pudding
11)Grease a baking pan with butter. 12)Sprinkle cubed bread in the baking pan. 13)Now sprinkle with the soaked raisins along with orange juice or rum. 14)Pour the prepared custard over the bread cubes. Allow the custard to soak in the bread for 15 minutes. 15)Sprinkle the pudding with almonds and sugar. Now place the baking dish into the preheated oven for 45-50 mins or until golden and crispy on top. 16)Remove this and let it stand for 5 mins. Serve warm with ice cream or cream and powdered sugar.

Since this is an eggless pudding, some kind of thickening ingredient is required to make custard. You can use cornstarch in this recipe, use 1 tbsp instead of 2 tbsp custard powder.
2)Can I add fruits into my bread pudding?
fruits like apples, banana and berries can be added in the bread pudding. Sprinkle chopped fruits over the bread before pouring custard.
