Funfetti Birthday Cake Meets Cheesecake!
Instead of making a funfetti cake for an upcoming birthday or party you’ve got to try these festive funfetti birthday cheesecakes! They are a fun change from the traditional Funfetti cake, they still have that same classic flavor plus the added decadence and flavor of cheesecake. No one can resist a birthday cake cheesecake!
Mini Funfetti Cheesecake Ingredients
With confetti birthday cheesecake, you start out with a crisp, buttery, vanilla wafer cookie base. I like wafer cookie crusts better than the traditional graham cracker crust for these because it’s sweeter and add to the cake batter flavor. You can use graham cracker crumbs, golden Oreos, or even sugar cookie dough as your base, too. Then top that with a rich and luscious, perfectly sweet and creamy, rainbow sprinkles-dotted, almond and vanilla flavored cheesecake batter! The almond extract and vanilla extract give it the typical Funfetti flavor by the way. Instead of a large springform pan that requires cutting a slice for each party guest, making these as mini cheesecakes is easier and more fun for parties and small hands. Everyone will want the recipe!
How to Make Mini Funfetti Cheesecakes
Make the crust by mixing crumbs, butter, and sugar. Bake in paper-lined muffin cups. For the filling mix sugar and flour, pour over cream cheese in a bowl of a stand mixer. Mix at medium speed with a paddle attachment until the texture is smooth, scraping down the sides of the bowl. Blend in eggs then sour cream, heavy cream, and extracts. Fold in sprinkles. Pour filling over the crust layer. Sprinkle with a few more sprinkles. Bake until nearly set, and let cool. Chill through until it’s time for your celebration!
