I was looking for a wedding style ghee rice recipe for a long time, finally got it from my aunty and when i tried it, the rice turned out to be delicious. I loved it to the core and the rice turned out to be perfectly flavourful.

About Ghee Rice Recipe

Ghee Rice is a popular dish made with either basmati rice or seera samba rice. The rice is flavoured with ghee, coriander leaves, mint leaves and fried onion. This dish is also called as nei choru and is very popular all over south indian specially in muslim community and weddings.  Ghee rice is usually accompanied with chicken curry or mutton curry. Ghee Rice Using Kaima Rice (Seeraga Samba Rice)

Tips & Tricks

There are few steps required to make the perfect ghee rice.

Seasoning 

Heat ¼ cup oil in a pressure cooker, add in cardamom, cumin and let them sizzle. Now add in drained rice and fry it for 6 to 7 mins till the rice is nicely toasted. Add in the ground masala and fry it for few mins so the masala is nicely coated with rice.

Cooking Ghee Rice

Now add in coconut milk, water, salt, green chillies and mix well. Bring it to a boil. simmer the flame, cook covered for 1 whistle, then put the pressure cooker over a tawa and let it cook on very low heat for 15 mins. 

Toppings for Ghee Rice

When the rice is cooking, make the topping. Heat oil for deep frying, add in cashews and fry till golden, now add in onions and fry till golden as well. Remove it and set aside.  Add in curry leaves and fry till golden, drain and set aside. Now add in coriander leaves and fry till golden, drain and set aside. Add in mint leaves and fry till golden. Drain and set aside.

Serving

Once the rice is cooked, open it and fluffy it lightly. Now spoon this in a large bowl and let it cool lightly, now add the fried things over the rice and fluff it up. Serve with any curries. INGREDIENTS 

Seera Samba Rice - 1 cup Coconut Oil - 2 tblsp Ghee - 2 tblsp Fennel Seeds / Saunf / Sombu - 1 tsp Cumin Seeds / Jeerakam - 1 tsp Cinnamon / Pattai - 1 Cardamom / Yelakai - 4 Cloves / Krambu - 3 Bay Leaf - 1 Onion - 1 large sliced thinly Green Chillies - 3 to 4 Garam masala powder - 2 tsp Salt to taste Coconut Milk - 1 cup Water - ½ cup

INSTRUCTIONS 

Wash and soak seera samba rice for 30 mins. Heat oil in a cooker. Add whole spices. Add onions and chillies and saute till golden. Add in rice and mix well. Add coconut milk, water, salt, garam masala powder and mix well. Bring it to a boil and cook on a low heat for 15 mins. Take it off the heat and take it in a bowl. Add ghee and mix well Serve.

Yes u can use butter in ghee rice, but ghee has a unique aroma which butter cannot give.
