What is the difference between granita and sorbet?
Sorbet, like ice cream, sherbet, and gelato, is made in a machine that freezes the ingredients while gently folding in air. Most importantly, churning prevents ice crystal formation. In contrast, granita is all about the ice crystals.

I was waiting to post this recipe for the past couple of days. This recipe is similar to my grape popsicles, without any shame i am using the same pics. I love making granita’s, check out the watermelon granita which i posted before. This recipe is awesome and very refreshing. I hope you will love this as much as we did. Granita is a semi-frozen dessert made with sugar, water, and a variety of flavourings. It originated in Sicily and is now available in various forms throughout Italy. Its related to sorbet and Italian ice, but in most of Sicily, its smoother and more crystalline.
Sugar :
Sugars may lower the freezing point; nevertheless, if you add enough sugar, your ice will remain soft-ish. Unfortunately, this might lead to an overabundance of sweetness in your ice. What does a granita taste like?
Grape, Lemon, cinnamon, and jasmine are the classic granita flavours, with variations including strawberry, almond, and coffee. However, depending on the season, there are also pistachio, black mulberry, peach, mandarin, and pineapple. Another popular flavour is “chocolate granita,” which is actually made with cocoa.
Who invented granita?
Francesco Procopio dei Coltelli, a cook who lived between Sicily and Paris at the turn of the 16th century, is credited with the invention. The fascinating story of the birth of the world’s most famous cold dessert can be found at the Casa del Nespolo Museum in Acitrezza.
