Green Tomato Curry (Hare Tamatar Ki Sabji, Raw Tomato Curry) is a North Indian semi-dry sabji made using unripe green tomatoes, jaggery, and spices. The tangy taste of green tomatoes pairs very well with jaggery. Make this sabji for everyday meals and serve it with roti, paratha, or dal rice. Spice Powders – You will need basic Indian spice powders, such as coriander powder, turmeric powder, Kashmiri red chili powder, and asafetida (hing). Jaggery – Use organic black jaggery for its health benefits. Light-colored jaggery has chemicals added to lighten its color, which harms the body. Others – You will also need oil, cumin seeds, fenugreek seeds (methi dana), fresh ginger, garlic, green chilies, salt, and cilantro (fresh coriander leaves). If you like your sabji saucy, then add ½ cup of coconut milk or vegetable stock. Add the following ingredients once the oil is hot, and let them crackle for 4-5 seconds.

1 teaspoon finely chopped ginger 1 teaspoon finely chopped garlic 1 teaspoon finely chopped green chilies

Cover the pan with a lid and cook until tomatoes are cooked through (10-12 minutes). Stir a few times while cooking. Add 2 tablespoon powdered jaggery and 2 tablespoon chopped cilantro and mix well. Serve hot.
