Grilled Teriyaki Chicken Kebobs
Grilling season is here, and I want all my meals to start outside on the grill! Kebobs are such a great way to use fresh produce that is in abundance in the spring and summer months. Grilling the fruits and veggies releases so much incredible natural flavor that you don’t need lots of spices or additional flavors added to the process. I know the servings I listed says 4 but I might recommend 3, my husband and I each ate about 4 skewers. They were so tasty I just couldn’t stop, but they’re mostly veggies right? Really these are fairly healthy. They are low in fat, full of fruit and veggies and a great source of lean protein from the chicken. I love when I can have a healthy meal that is so amazingly good. Healthy and yummy, it’s a definite keeper. We used the standard bell peppers and onions, but also added in pineapple chunks. If you’ve never tried grilled pineapple, you’re in for a treat. Thick tomatoes, juicy zucchini, yellow squash, red onion, mushrooms, potatoes… any veggies you have on hand can be added to your kebob skewers. Biting them off the skewer is especially fun for kids—I bet you can get them to try new vegetables this way with ease. Enjoy!
