Roasting Spices

1)Take all the spices in the kadai. Since I am making a small batch, I added all the spices in together. if you are making a bigger batch, you have to roast it one by one. 2)Add in black pepper. In this recipe, black pepper can be skipped but it adds a wonderful aroma. 3)You can break cinnamon stick into small pieces before roasting. Roast the spices by constantly mixing for even roasting. Now as you can see the spices are well toasted and looking golden. It smells even more aromatic.

Adding Final Ingredients

4)If you are using whole dry red chillies and coriander seeds, add it along with other spices and roast for few minutes till aromatic. If you are using coriander and chilli powder, add it in the end, roast for few seconds and turn off the heat.  5)I used Kashmiri chilli powder because I don’t want my masala to be spicy. You can use half regular chilli powder and half Kashmiri as well.  6)Since I have used powdered spices, I turned off the heat immediately. The residual heat is enough to roast the spice powder.
