Homemade chocolates

This is a simple and delicious recipe for homemade chocolates. It is made with a base of milk powder and cocoa powder and the taste was just yummy. it is soft, fudgy, chocolaty and just melts in mouth. I have already shared a recipe for homemade dark chocolate in this blog. But i want to share it as an easy recipe, so here you go.

About Homemade Chocolates 

Most of you think that making chocolates at home is complicated. Not anymore, you can easily make homemade chocolates with just sugar, milk powder, cocoa powder and butter. The ingredients are basic and simple but the cooking technique is what makes it fudgy and delicious. The taste of this chocolate is very similar to dairy milk.  Some recipe uses coconut oil mixed with cocoa and sugar, but in my opinion it doesn’t taste that great. I have made that version and found that coconut oil over powers the chocolate taste. But this one is easy and taste almost like a real milk chocolate bar.  Whenever you make chocolate try to source best quality cocoa powder because the taste and flavour of the chocolate depends on the cocoa quality. Pay attention whenever you make sugar syrup, don’t over cook the sugar syrup which may make your chocolate hard. Just cook till one string consistency and you are good to go. Homemade Chocolate Ingredients 

Milk powder  - I used milk powder which is also known as dry milk powder in this recipe. You can find brands like nestle everyday, society and more. Don’t use baby milk formula which is completely different.  Cocoa powder - Whenever you make chocolate try to source best quality cocoa powder because the taste and flavour of the chocolate depends on the cocoa quality.  Sugar  - I used regular granulated sugar for making the syrup.  Butter - butter helps provide the buttery flavour and also makes the chocolate set later. Flavourings - as far as the flavourings I used vanilla and salt which adds flavour and balance taste in the chocolate.  Optional - you can use chopped dried fruits and nuts in this recipe

Best Cocoa to Use

Whenever you make chocolate try to source best quality cocoa powder because the taste and flavour of the chocolate depends on the cocoa quality. I prefer to use Hershey’s or hintz for making chocolates.  Look for unsweetened cocoa powder which is what we use for baking and making chocolates.  Also don’t use chocolate milk powder, hot chocolate mix or hot cocoa which is entirely different from cocoa powder.  If you use the finest quality cocoa, a little goes a long way. You need only ⅓ cup of cocoa powder in this recipe which provides all the taste and flavour. 

My Tips for No Fail Homemade Chocolates 

Mix dry ingredients ahead - before you start cooking, mix milk powder with cocoa and salt till it is combined really well. This step is very important because once the syrup is ready everything goes so fast. You can even use a sifter for even lump free mixture.  Nonstick pan - over the years of making homemade chocolates, I found that using a nonstick pan helps. It prevents the mixture from getting too hot and also the mix doesn’t stick to the pan.  One string consistency - it is important to get the proper consistency in sugar syrup. Cook sugar until one string consistency. when you take some of the syrup between your index and thumb finger, you will be able to form 1 string. This is the right consistency. As soon as it reaches the consistency, take it off the heat and add remaining ingredients. Over cooking sugar syrup make chocolate crumbly and break apart.  No over mixing - once cocoa and milk powder is combined with the sugar syrup, transfer it to the container to set. No over mixing else the chocolate mixture will get crumbly.  Set at room temperature - this homemade chocolate sets beautifully at room temperature. But if you are in a hurry, you can pop it in fridge for 30 minutes to speed things up.

How to Make Homemade Chocolate (Stepwise Pictures)

Mixing Dry Ingredients

1)I am using dry milk powder. Measure and take milk powder in a bowl. 2)Add in cocoa powder. This is unsweetened cocoa, try and source best quality cocoa for this recipe. 3)Add some salt into the mixture. Salt helps to balance the sweet taste of the chocolate also helps to enhance the chocolaty flavour. 4)Mix this really well using a whisk and set aside. If your cocoa is lumpy, you can even sieve this mixture.

Making Sugar Syrup (One String Consistency)

5)it is important to get the proper consistency in sugar syrup. For making that, take sugar and water in a nonstick pan. Mix well and heat on medium heat till sugar melts. 6)Let the sugar cook for 3 to 4 minutes. Cook sugar until one string consistency. 7)when you take some of the syrup between your index and thumb finger, you will be able to form 1 string. This is the right consistency. Don’t over cook the sugar syrup, else the chocolate mixture will get crumbly. 

Adding Butter & Vanilla

8)Make sure to reduce the heat to the lowest possible. Now add in vanilla extract and butter and mix well. 9)Once the butter melts, take this off the heat.

Adding Dry Ingredients

10)Now add in the milk powder and cocoa mixture into the syrup. 11)Mix this until it is just combined. once cocoa and milk powder is combined with the sugar syrup, transfer it to the container to set. No over mixing else the chocolate mixture will get crumbly. 

Setting Chocolate

12)Now transfer the chocolate to a parchment lined baking pan. 13)Place another sheet of parchment paper on top and smooth the top using a small flat based measuring cup. 14)Allow the chocolate to set at room temp for 1 hour. 15)Once set cut into pieces and enjoy.

Expert tips 

Use good quality cocoa powder for flavour and taste.  You can add finely chopped nuts and dried fruits for texture and taste.  Don’t over cook the sugar syrup, else the chocolate mixture will get crumbly.  Use milk powder and not baby formula or baby milk powder.  Vanilla and salt provides balanced taste in the chocolate, but you can add any flavourings as you prefer. 

Serving and storage 

Homemade chocolates can be stored at room temperature for 1 day. You can keep in fridge in an air tight container upto 4 to 5 days.
