When Mohit is not at home, my lunch is mostly khichdi. I like to make a variety of khichdi using different lentils, grains, and veggies. I had some jowar grains left in the pantry and wanted to finish them. So, I came up with this recipe, which turned out very well. I used my basic masala khichdi recipe and ground the jowar grains to a coarse powder. Because of the added spice powders and veggies, it tasted like my Bajra Khichdi but with a bang. You must try it too!
About Jowar Khichdi
Jowar Khichdi is a one-pot meal in which coarsely ground jowar grains are cooked with lentils, vegetables, and spices. It is easy to make, needs basic pantry ingredients, and comes together in under 45 minutes. You can prepare the jowar khichdi in a traditional stovetop pressure cooker or an instant pot. Choose whichever method best suits you. Serve it with a dollop of ghee, roasted papad, and yogurt (curd). Add a few wedges of lime. Lentils (Dal) – I have used yellow moong dal along with jowar, but you can also make it with green moong dal or any other dal that you prefer. Vegetables – I have used green peas, carrots, and tomatoes, but you can add more veggies such as green beans, cauliflower, potatoes, mushrooms, green bell pepper (capsicum), etc. Ghee – For the best taste, make the khichdi in ghee. To make the khichdi vegan, replace ghee with oil. Others – You will also need cumin seeds, bay leaves (tejpatta), cloves (laung), onions, green chilies, ginger, garlic, turmeric powder, red chili powder, salt, water, and cilantro (fresh coriander leaves). Once it says HOT, add ½ cup jowar grains to the inner pot and roast for 5 minutes, stirring frequently. Transfer the roasted jowar grains to a grinder and grind to make a coarse powder.
Make The Khichdi
Add 2 tablespoon ghee to the inner pot. Add the following ingredients once the ghee is hot, and let them crackle for 4-5 seconds.
1 teaspoon cumin seeds 2 bay leaves 2-3 cloves
Add the following ingredients and cook until the onions turn golden brown.
½ cup sliced onions 2 teaspoon chopped green chilies 2 teaspoon chopped ginger 2 teaspoon chopped garlic
Add the following ingredients and cook for a minute.
¼ cup green peas ¼ cup cubed carrots ½ cup chopped tomatoes ½ teaspoon turmeric powder 1 teaspoon red chili powder 2 teaspoon salt
Add roasted jowar powder, 3 cups water, and ½ cup yellow moong dal (rinsed), and mix well. Close the instant pot lid and set the valve to the sealing position. Press PRESSURE COOK and set the timer for 12 minutes. Once the timer goes off, let the pressure release naturally for 15 minutes. Release the remaining pressure manually and open the lid. Mix the khichdi well. Garnish with 2 tablespoon chopped cilantro and serve hot.
