Pin I came across this recipe few months back. Had bunch of karupatti on hand which was about to go bad. So decided to make a batch of agar agar or china grass pudding. This one is super easy to make. It requires a handful of ingredients which you already have on hand. The whole recipe came together in just few minutes. Once the pudding is done, pour it into a large mould and leave to set. Since this recipe uses agar agar, you can leave it at room temp to set. It literally takes 1 to 2 hours to set. What is Karupatti?

Palm Jaggery we are calling as karupatti in Tamil is made from the extract of Palm Trees. It is cooked in a large earthernware pot for hours.. The mixture is then poured into moulds and left to set overnight.

Can I use gelatin instead of agar agar?

How to Make Karupatti China Grass Pudding

1)Soak china grass / agar agar in water for 15 mins. 2)Cook karupatti/palm sugar in water till it is melted. 3)Add soaked china grass and cook till it is melted. Strain the mixture. 4)Add in coconut milk and flavourings. 5)Strain the whole thing one more time. 6)Pour it into moulds and leave it to set. 7)Slice and serve. Pin

Pin 7)Now the china grass is soft. Pin 8)Add it into the karupatti. Pin 9)Boil till it melts. Pin 10)place a sieve over a bowl. Pin 11) Now strain this. Pin 12)Discard the sediments.
