I made this kootu so many days before and served it with paruppu rasam and vazhakkai chukka fry. It was truly yummy, vallarai keerai has a little bitterness, so i added a tiny bit of sugar to balance it and it really worked. You can check out my other kootu recipes and spinach recipes too. How to Make Keerai Kootu
Take all grinding ingredients in a blender, add some water and make it into smooth puree. Take dal, spinach, tomatoes, garlic, turmeric powder and water in a pressure cooker. Cook it for 2 whistle, simmer the flame for 10 mins. Turn the heat off and let the steam go all by itself. Now open the cooker and put it back on stove. Add salt, sugar and ground masala. Mix well. Adjust the consistency with some water.Let this simmer for 5 mins.. Now make seasoning by heating oil and frying all seasoning ingredients in it. Pour this over the kootu and mix well. Serve with rice.
Version 2: Red Spinach Kootu | Amaranth Leaves Kootu

Red Spinach leaves / Amaranth - 3 cup chopped finely Yellow Split Moong Dal / Pasi paruppu - ½ cup Salt to taste
Fresh Coconut - ½ cup Grated Dry Red Chilli - 2 Cumin Seeds / Jeerakam - 1 tsp
Ghee - 1 tblspn Mustard Seeds / Kaduku - 1 tsp Urad dal / Ulundu Paruppu - 1 tsp
