Kurkuri Bhindi
This is one recipe which I made recently and instantly fell in love with it. Normally we make poriyal, avial, thoran, pachadi and even sambar out of the ladysfinger. I have even tried Rajasthan Bhindi too. But this one is completely different, plus it is so simple to make. You just need a handful of ingredients but the end product is crunchy and delicious. Make sure you check all my ladysfinger recipes. This is a fried ladysfinger or okra dish. I love the simplicity of this recipe. I added some amchoor powder in this, which gave a nice tangy taste to it. If you love amchoor powder, You can even sprinkle some after it is fried.
About Kurkuri Bhindi (Fried Okra)
Kurkuri means crispy or crunchy, Bhindi is known as ladies finger, okra or even gumbo. Sliced ladies finger is tossed with spices, gram flour and fried till crispy. This dish has a tangy chatpata touch to it because of the amchoor powder added which makes it so good. Enjoy it on its own or with your favourite dipping sauce like mayonnaise or sweet chilli sauce. Ladies finger is one of the vegetable which has a love or hate relationship with many people. Some love ladies finger and some hate it because of its slimy nature. In India we cook ladies finger many different ways including ladies finger fry, poriyal or curry. Aloo Bhindi is a popular North Indian dish made with ladies finger and potatoes cooked in onion tomato masala. Okra tends to be slimy, it has to be cooked properly to remove the slimy texture. Because of their slimy texture people prefer to fry them to make it extra crispy. This bhindi Kurkuri is a simple side dish that can be made and served with rice. If you are serving it as a starter, make sure you sprinkle with some chaat masala after it is fried. It adds a zingy taste to the end product. Kurkuri Bhindi Ingredients
Ladies Finger | Okra | Bhindi - choose tender ladies finger which is easy to cook and prepare. Also it taste the best. There is a traditional way to check for ladies finger tenderness, try snapping the end of the ladies finger using your fingers, if it breaks easily them the ladies finger is young and fresh. Spice Powders - I used a combination of chilli powder, amchoor powder, turmeric and a touch of garam masala powder. If you are serving it as a snack, sprinkle some chaat masala powder once fried. Gram Flour - gram flour also known as besan is sprinkled over ladies finger just before frying. Fry them in batches for maximum crispy texture. Oil - use neutral oil like refined oil, canola or sunflower oil for frying. Optional - you can sprinkle ladies finger with rice flour or cornstarch for extra crispy texture. Once fried sprinkle with some chaat masala, It adds a zingy taste to the end product.
How to Make Ladies Finger Crispy
Main step in Kurkuri bhindi is preparing the ladies finger, slice them in half and cut them lengthwise to make them crunchy. Also wash and dry them before slicing to avoid it getting extra slimy. For extra crispy texture, Make sure you dry them completely with some paper towel. Toss the sliced okra with spices and gram flour, Deep fry them in batches for crispy texture. In this particular recipe, gram flour is added for crunchy texture. You can add rice flour and cornstarch to make it extra crispy. I prefer deep frying bhindi for their taste, but you can air fry or bake them to your preference. I have shared method for baking and air frying bhindi, make sure you check them.

Preparing Ladies Finger
1)Use young tender ladies finger for taste, it cooks much faster. Make sure the ladies finger is completely washed and dried before slicing. I like to pat them dry in a kitchen towel before slicing. It prevent okra from going slimy. Now to prepare the ladies finger. Cut the top hat off the ladies finger. 2)Slice the ladies finger in the middle lengthwise. 3)Now cut them into small pieces like this. 4)take your prepared ladies finger in a bowl.
Marinating Ladies Finger
5)Now to the okra, add in chilli powder, garam masala, amchoor powder and turmeric powder. You can add more or less spice powders as you prefer. 6)Sprinkle some salt to taste. 7)Now add in gram flour which makes the okra crispy. Along with gram flour, you can ad some rice flour or cornstarch which makes them extra crispy. 8)Now toss to coat the ladies finger with the spice powders and gram flour. 9)Allow them to marinate for 5 to 10 minutes. Now you can see the water from the ladies finger has made the marinate stick to the vegetable.
Frying Kurkuri Bhindi
10)Drop the ladies finger in hot oil and fry til golden and crispy. Make sure your oil is hot enough before dropping in the bhindi, else the bhindi will absorb lots of oil. Pro Tip: Fry bhindi just before serving to retain its maximum crispy texture. 11)Use a slotted spoon to gently mix the ladies finger so it fries evenly. 12)Now it has turned super crispy. 13)Strain this using a slotted spoon to drain excess oil. Place the fried bhindi in paper towel. 14)Serve hot.
