How to Make Lemon Blueberry Cupcakes
Preheat oven to 170 degree C. Start by mixing 1 tblspn of lemon juice in 1.5 cup of milk. Take a bowl and add in oil, sugar and mix well. Add in milk and mix till the sugar is dissolved completely in the milk. Now add in flour, baking soda and baking powder. Mix well till it is completely mixed. Add in lemon juice and blueberries. Fold gently. Now take your muffin tray. Line them with muffin cases. Spray it with some oil. Spoon the batter evenly between them. Bake them for 35 to 40 mins till the cupcakes are done. Insert a tooth pick to see whether it is baked. If the toothpick comes out clean then the cakes are done. Remove it and let them cool a bit. Serve warm with a glass of milk.

Couple weeks back, i decided to try my hands on blueberry lemon cupcakes. So icalled hubby and asked him to help me in this. He too came and made the entire thing.I measured all the ingredients and I stood beside him and took pictures of it. He made the batter and poured it into the muffin cases and put it in the oven. Then he was so impatient, he kept on asking me when it will be ready, i told him to wait and finally after 35 mins i took the cupcakes out of the oven and took two of the cakes from it and gave him to taste. You know what comment i got from him, “OMG IT IS JUST MELTING IN MY MOUTH, IT IS SO SOFT” And yes this cupcakes just melt in your mouth and it has an amazing lemony flavour and taste to it. You have to try it to enjoy the taste. And one more thing, if you want your kids or even kid like hubby to eat any of their hated stuff, just ask them to help you and make it. This way they will taste it for sure.
