I created this Mini Cheesecake Bites recipe because if you haven’t noticed… I LOVE cheesecake and I wanted a simpler, ready-to-enjoy cheesecake recipe. Yes, those New York-style cheesecakes are utterly amazing but sometimes I just can’t wait for it to bake an hour, then chill eight hours to dive in and enjoy it! These are ready to eat in about 15 minutes!

Mini Cheesecake Variations

This recipe is so versatile! Here are a few fresh ideas for remixing these cheesecake bites:

Try a different pudding flavor (I want to try white chocolate and chocolate!) Drizzle with a jam or berry syrup Garnish with fresh fruit Top with caramel, chocolate syrup, or melted chocolate Add crushed Oreos or other cookies to the cheesecake mixture Use an Oreo or other type of cookie as your cheesecake base Make it tangy by adding lemon or lime zest and juice to the cheesecake Shake festive sprinkles on top or in the cheesecake for birthdays or to match holiday colors Spread Nutella on the cracker base before piping cheesecake Use strawberry jam and top with a fresh blueberry for a Fourth of July theme Turn the Cheesecake Bites into a sandwich with a graham cracker on top, too!
