“Brownies” saying that name makes me happy. I love brownies, My love for brownies had made me post quite a lot of brownie recipes in this blog. But among all those brownies this has become my latest favorite.
About Nigella’s Everyday Brownies
This is one is my Favorite Domestic Goddess Nigella’s recipe. This recipe is from her latest show “Nigella’s Kitchen”. I watched this video last week and believe it or not I made it the next day itself. I actually halved the original recipe. You could double or even triple the recipe. This recipe turned out so gooey in the middle and crusty in the top with a little bit of creamy milk chocolate bites. Make sure to check my fudge brownies. The recipe is very simple to follow. It uses regular ingredients like flour, cocoa, sugar, butter and chocolate. You hardly need a total of 30 to 35 minutes to make this brownies.

Chocolate Brownies Ingredients
All Purpose Flour - I used refined flour in this recipe. I haven’t tried this recipe with wheat flour, so not sure how it will turn out. Also this recipe uses less flour to get the fudgy texture in brownies. Butter - use unsalted butter for better taste. Since we are using salt in this recipe, it is better to use unsalted butter so you can control the salt level in your baked goodies. Granulated Sugar - the original recipe calls for brown sugar. But I used white sugar and it turned out just right. Cocoa - whenever you are making cakes with cocoa. It is important to use the finest quality of cocoa powder for rich chocolate flavour. Baking Soda - a small pinch of baking soda helps with the lift and softness. Salt & Vanilla - both are for flavour and taste. Eggs - use room temperature eggs whenever you are making baked stuffs. Milk Chocolate - I would say this is the most important ingredient in this recipe. The chocolate pieces added in this melts slightly when baked and taste so rich and fudgy.
How to Make Chocolate Brownies (Best Recipe Ever)
Pre-prep - Preheat the oven to 180°C. Line a square tin with foil and apply some butter on it… Make Batter - In a sauce pan add butter, sugar and melt it down. Add in cocoa, mix and turn off the heat. Add in flour, baking soda, salt and mix. Pour in eggs, vanilla and mix till it becomes smooth consistency. Now fold in the chopped milk chocolate and mix well. Bake & Serve - Pour this into the tin and bake it in the oven for 25-30 min. Insert a knife it will have some moist crumbs in it. Cut into squares and enjoy with a glass of milk or a scoop of vanilla ice cream.
How to Make Chocolate Brownies (Stepwise Pictures)
Pre-preparation
1)Measure and Take all your ingredients. Preheat the oven to 180 Degree C or 375 Degree F. Line a 4 to 5 inch square tin with foil and apply some butter on it. You can line it with parchment paper as well.
Melting Butter with Cocoa
2)This recipe is so easy to make. You start by making the wet ingredients in a sauce pan. Take unsalted butter in a sauce pan. We are going to melt the butter on a low heat. 3)Add in sugar. Add it directly into the sauce pan. Make sure the sauce pan is on low heat. 4)Add in cocoa powder. I adding the cocoa powder directly into the melted butter. Pro Tips: adding cocoa to hot butter blooms the cocoa and makes it more chocolaty. 5)Mix all this together and take it off the heat.
Adding Dry Ingredients
6)Once you turn off the flame, let the butter and cocoa mixture sit for 2 minutes. Once it is slightly cooled, add in plain flour and use a wooden spoon to gently mix it. 7)Add in baking soda and salt, mix it well.
Adding in eggs
8)Now we are going to add in egg. Make sure the egg is at room temperature. 9)Add in vanilla extract. Mix the egg and vanilla into the batter using a spoon till it is combined.
Adding chocolate
10)Add in chopped chocolate. Don’t be stingy, be generous with the chocolate. 11)Mix the chocolate into the brownie batter.
Baking brownies
12)I used a 4 to 5 inch square cake pan. You can line the pan either with parchment paper or foil. Pour the brownie batter into the prepared pan. Place the pan in a 180 degree C preheated oven and bake for 25 to 30 minutes. 13)Bake until cooked. Remove from oven and let it sit for 15 minutes in the pan. 14)Now slice and serve.
Expert Tips
When melting butter, make sure the heat is low so you don’t burn anything. Once cocoa is added, make sure you turn off the heat and let it sit for 2 minutes for the cocoa to bloom. Instead of lining the pan with foil, you can line it with parchment paper. Don’t over bake the brownies, else it may turn hard.
Storage
The brownies can be made up to 3 days ahead and stored in an airtight container. Will keep for total of 5 days. The brownies can be frozen for up to 3 months in airtight container, layered with baking parchment. Thaw overnight in cool place.
