Oatmeal cake 

I love adding oats in my baked goodies, I made so many version of baked oats recipe before. This is my latest addition, I wanted to bake a plain simple oats cake squares which can be served with a cup of tea or coffee and this is perfect. This cake is perfect for breakfast. Even my kids enjoy having a slice of this cake with a spoonful of sweetened vanilla yogurt, maple syrup or honey. I enjoy this with a cup of tea or coffee.

About Oatmeal Cake 

Oatmeal cake is a healthy baked cake recipe made with cooked oatmeal, dried fruits, nuts, butter, sugar and eggs. They are made with oatmeal as the main ingredient, and sometimes plain or wholemeal flour is added as well. If you are ever left with a bowl of cooked oatmeal, you can transform it to this delicious cake that is perfect for breakfast. The cake is made with cooked oatmeal, plain flour, eggs, dried fruits and nuts which makes it wholesome and nutritious.  The recipe which I shared is basic oatmeal cake but you can add chopped apples, mashed banana to make it extra tasty and healthy.

Oatmeal cake Ingredients 

Oats -  in this recipe I used instant oats which I rehydrated with hot milk. You can use rolled oats instead of instant oats which might need some cooking before using in this recipe. You can use any leftover cooked oatmeal as well.  Milk - I boiled milk and use that to soften the oats. Instead of regular milk, you can use almond milk, soy milk or even oat milk. Plain flour - I used little plain flour to add texture to the cake. You can use whole wheat flour instead of plain flour.  Sugar - depending on sweetness level you prefer, you can add more or less sugar you need. Instead of sugar you can use maple syrup or honey as well.  Flavourings - I added a touch of ground cinnamon for flavouring.  Raising agent - baking powder helps the cake to rise and get fluffy.  Butter - Unsalted butter allows you to completely control the Salt level of your recipe. It is always best to use unsalted butter than salted ones.  Dried Fruits & Nuts - you can use any chopped nuts or dried fruits. I had a bag of mixed nuts and dried fruits so I used that.

Which Oats to Use

There are wide variety of oats available in the market. Some of the most popular ones are rolled oats (old fashioned oats), quick oats (instant oats) and steel cut oats. For cakes it is recommended to use quick oats or rolled oats. I prefer using rolled oats or quick cooking oats in my cake. Rolled oats is much healthier but I like to cook it prior in warm water or milk for at least 15 minutes to make it softer.

Recipe for using leftover cooked oatmeal

As I mentioned earlier. This recipe is perfect to use up leftover cooked oatmeal.  The soft cooked oatmeal makes the cake extra soft and moist. You can use any flavoured oatmeal, instant oats or even overnight oats can be used as the base.  I used quick cooking oats in this recipe which I softened with hot milk. You can use rolled oats which makes this even more heartier.  Along with oats, I also added some flour in the cake batter. You can use whole wheat flour which makes this cake even more healthy. 

How to Make Oatmeal Cake (Stepwise Pictures)

Pre-Preparation

1)Preheat oven to 180 degree C | 356 degree F. Take a 5 inch square cake pan and grease with oil and dust it with flour, coat it on all sides, Tap off the excess and set aside.

Softening Oats

2)Take milk in a sauce pan. Bring this to a full boil. Pro Tip: Instead of regular milk, you can use almond milk, soy milk or even oat milk. 3)Pour the milk over a bowl of instant oats. This is quick cooking oats. Mix well and allow it to sit for 30 minutes covered for the oats to soften. Pro Tip: If you have cooked oatmeal, you can use that instead of doing this step. 4)After 30 minutes oats has softened and most of the milk has evaporated.

Coating Nuts with Flour

5)Take dried fruits and nuts in a bowl. This is a mixture of dried fruits, nuts, candied fruits which I have on hand. I used this, you can use any dried fruits of choice. 6)Add a spoon of plain flour into the dried fruits. 7)Toss to coat. This step helps the nuts to evenly distribute between the batter instead of sinking to the bottom.

Sifting Dry Ingredients

8)Take plain flour in a sifter. Instead of plain flour, you can use whole wheat flourl 9)Add a pinch of salt and ground cinnamon into the flour. 10)Add in some baking powder. A little bit of baking powder provides fluffy texture. 11)Sieve it well and set aside.

Creaming Butter & Sugar

12)Take soft unsalted butter and sugar in a bowl. You can use honey or maple syrup instead of white sugar. 13)Cream butter and sugar for 2 to 3 minutes using a whisk till creamy. 14)Add in one egg into the creamed butter and sugar. 15)Mix egg really well into the creamed butter and sugar. Mix it for 2 minutes till it gets slightly frothy.

Making Oatmeal Cake Batter

16)Add a spoon of vanilla extract. 17)Add in cooked and cooled oatmeal. 18)Mix this into the batter. 19)Add in plain flour mixture which we sieved earlier. 20)Use a spatula to fold the flour into the batter. 21)Add in dried fruits and nuts. 22)Fold the dried fruits into the batter. Oatmeal cake batter is ready.

Baking Cake

23)Spoon the batter into the prepared pan. Spread the batter evenly using a spatula. 24)Place the cake pan in a preheated oven and bake for 25 to 35 mins. Once the cake is baked, insert a toothpick to check whether the cake is baked or not. The toothpick should come out clean. Remove the cake from oven, let it cool in the cake pan for 10 minutes. Unmould the cake, slice and serve. 25)Enjoy.

Expert Tips

Instead of using freshly cooked oatmeal, you can use leftover cooked oats too.  Any nuts, dried fruits and chocolate chips can be used in the batter.  Oatmeal cake can be served with maple syrup or honey as well.  Whole wheat flour can be used instead of plain flour. 

Serving and Storage 

Oatmeal cake can be served with plain yogurt. drizzle of honey or maple syrup. You can enjoy with fruit compote or fruit sauce.  Leftover oatmeal cake can be stored in fridge upto 3 days. Reheat in microwave for few seconds.
