Ingredients for Onion Chicken Fry
Chicken - ½ kg on the bone
For Marinating:
Chilli powder - 1 tbsp Coriander powder / Malli podi - 2 tbsp Garam Masala Powder - 2 tbsp Turmeric Powder / Manjal podi - 1 tsp Salt to taste
For Masala:
Oil - 3 tbsp Cumin Seeds / Jeerakam - 1 tsp Onion - 4 large finely chopped Green Chilli - 3 pricked with a knife Ginger Garlic Paste - 3 tbsp Coriander Leaves / Cilantro - ½ cup finely chopped Lemon Juice - 2 tbsp or to taste
The cooking method is so simple. Actually you add very little oil in a nonstick pan. Add the masala and whatever stuff you want to, then add in the chicken. The chicken should be with a little fat. Now stir it well in the masala and cover the pan with a tight fitting lid. Reduce the flame to a very low, you dont have to add any water. The chicken will leach out lots of it own juices, and the chicken cooks in its juices. Once the chicken is cooked. Increase the flame to a high and start browning the chicken. The water will evaporate and the chicken will roast and dry up in the oil which we added and the oil leached from the chicken. This chicken dish will taste like fried one.
