Parmesan Crusted Salmon Recipe
One thing I’ve been intrigued with lately is the idea of cooking a meal on a sheet pan. I haven’t even tried one pot pasta recipes yet, probably because I fear soggy noodles or something. I don’t really understand how you can add traditional pasta noodles to cold water and then bring it to a boil and cook it with everything else and end up with noodles that have a great texture. I shouldn’t slam it until I try it though, and they usually look really good. I’ve seen a few sheet pan dinners around and I love the idea of that! To throw everything on a sheet tray and bake it all together in the oven seems genius! And in this Parmesan crusted salmon and broccoli recipe, the baking sheet is lined in foil so clean up is a breeze. Once you try this simple baked salmon and broccoli you’ll be hooked! Parmesan Crusted Salmon Ingredients
For the Parmesan salmon and broccoli, you’ll need:
Broccoli crowns Olive oil Garlic Salt and pepper Skinless salmon fillets Mayonnaise Lemon juice Grated Parmesan Bread crumbs Fresh parsley Lemon zest Dried thyme
How to Bake Salmon and Broccoli
Place broccoli on a foil-lined baking sheet in a mound. Drizzle with olive oil and season with salt and pepper, then toss to coat. Spread broccoli to edges of baking sheet. Season salmon with salt and pepper, and place in center of baking tray. Whisk together mayo, lemon juice and garlic and brush over salmon. In a separate bowl, whisk together bread crumbs, Parmesan, parsley, lemon zest, thyme and olive oil. Sprinkle over salmon. Bake until salmon is cooked and broccoli is crisp-tender.
How Long Should I Bake Salmon?
Unsure what the correct salmon bake time is? This recipe calls for you to bake salmon in a 400-degree F oven for 12 to 15 minutes. You’ll know the salmon is done baking when it’s easy to flake with a fork.
Can I Use Frozen Broccoli in This Recipe?
While you can technically roast frozen broccoli, I don’t recommend using it in this recipe. Fresh broccoli is best for this baked salmon recipe!
Tips for the Best Parmesan Crusted Salmon
If you like your broccoli more browned and roasted, then let it roast for 5 minutes before spreading it to the edges and adding the salmon to the sheet pan. For a more golden brown crust on your salmon, broil it the last 1 to 2 minutes it’s in the oven. Serve this salmon with a lemon wedge for an extra pop of flavor.
