You can even make the peanut powder in advance and store in fridge for a couple of weeks. It won’t go bad. By this way your work is half reduced. You can just mix this with rice and do a little tempering and your work is done. Hope you will love this and let me know how it turned out.
How to Make Peanut Rice
Take 1 cup rice in a pressure cooker, cover with 2.5 cup of water and pressure cook rice for 2 whistle and simmer for 5 mins. Switch off the flame and let the steam go all by itself. Now fluff the rice with fork and allow it to cool down. Now heat a pan on medium heat. Add in peanuts and roast it for 5 mins on a dry pan. Now add in dry red chilli and roast it for couple of mins. Now add in sesame seeds and roast it for a min. Now add in coconut and roast it for 3 mins till it turns light golden. Remove this whole thing on a plate and allow it to cool down. Take this in a blender and Grind this to a coarse mixture. Heat oil in a kadai and add all the tempering ingredients. Saute for a min. Now add in rice and mix well. Season with salt and mix well. Now add the powdered peanuts and toss well. Serve hot.
