About Piyush Drink
I almost always make shrikhand at home, but somehow, I bought a tub. The taste of the readymade shrikhand was nowhere close to the real deal, and everyone in my house refused to eat it. Now, to finish it off, I was looking for ways when I came across this Piyush recipe. I tried it, and thankfully, everyone at home loved it. Next time, I will try it with my homemade shrikhand; I am sure it will taste even better. Piyush is a rich and creamy beverage prepared with three main ingredients: shrikhand, milk, and buttermilk (plain chaas). It is flavored with ground cardamom, ground nutmeg, saffron, and nuts. Piyush is one of the most popular drinks in Maharashtrian and Gujarati cuisine and is traditionally consumed during the summer. Due to its rich ingredients, it is quite filling and wholesome, so you can also drink it on a sunny afternoon instead of your heavy meals.
Ingredients
Shrikhand – You can make Kesar Elaichi Shrikhand at home using my easy recipe or use store-bought. To make variations of this drink, you can try flavored shrikhand like pista shrikhand, mango shrikhand, or strawberry shrikhand. You can also use plain shrikhand to make it. Buttermilk (Plain Chaas) is added to thin out the drink. You can use thinned-out yogurt in place of chaas. Milk – Use whole milk (full-fat milk) for a creamy and rich taste. Sugar – Shrikhand is very sweet by itself. Add additional sugar only if you like your drink really sweet. Spices – Add ground nutmeg and ground cardamom to enhance the flavor. Nuts – Garnish it with a few slivered almonds and pistachios. They add a nice bite to the smooth and creamy piyush.
How To Make Piyush
Add 1 cup chilled kesar elaichi shrikhand, 1 cup chilled plain buttermilk (plain chaas), and 1 cup chilled whole milk to a blender. Note – Mix ¼ cup plain yogurt with ¾ water if chaas is not available Add ½ teaspoon ground cardamom, ¼ teaspoon ground nutmeg, and 6-8 strands of saffron (soaked in 1 tablespoon milk), and blend until everything comes together. Check for sugar and add if needed. Blend until combined. Pour piyush into four serving glasses. Garnish with almond and pistachio slivers and serve chilled.
