Masala Stuffed Buns
I made this last week and it was a huge hit in my family, everyone liked it so much. This buns will be great for a picnic, since it is less messy and basically it is very simple to make. In fact you could put any filling in this like this chicken buns.
About Stuffed Buns
Buns are nothing but yeasted flour dough made with plain flour, yeast, sugar, butter is rolled into balls and baked. Buns or rolls is great as evening snacks with a cup of tea. This stuffed potato buns are popular in Iyengar bakery. The buns has a spicy potato filling which taste so delicious. I added cooked carrots, cauliflower, green peas and potatoes in the filling. The dough is made with wheat flour, all purpose flour, yeast, sugar, salt, warm water and butter. The dough is divided into small portions and stuffed with this filling and baked.

Stuffed Buns Ingredients
For Dough - yeasted dough is made with wheat flour, refined flour, sugar, salt, dry yeast, butter. You can make the dough with plain flour alone. Mixed Vegetables - you can use carrots, cauliflower, green peas and potatoes. I pressure cook vegetables and used for filling. Onions & Tomatoes - use large onions and tomatoes. Cook that for few minutes till it is sauted. Ginger & Garlic - equal portions of ginger, garlic is ground and used. Spice Powders - I used chilli powder, turmeric powder and garam masala powder. Tempering - fennel seeds is the spice which I used. You can add cumin seeds also.

Take warm water in a bowl. Use Luke warm water. Dip your finger in the water and it should be very warm. Just like a warm bath water. sprinkle little sweetness like sugar, honey. Because yeast loves warm and sweet environment. now sprinkle yeast over it. I use dry yeast. leave aside for 5 mins to activate. The yeast mix should be bubbly and foamy. This means yeast is activated.
If your mixture doesn’t look foamy. 1)Then you must have added yeast to too hot water so the yeast has died. 2)You have used cold water so yeast didn’t activated. 3)Your yeast is expired. Always store yeast in freezer in an air right container.
How to Make Stuffed Buns (Stepwise Pictures)
Make Potato masala
1)Heat coconut oil in a pan. Add in fennel seeds, curry leaves and let them sizzle. 2)Add in chopped onions, green chillies. Saute onions till golden brown. 3)Add in ginger garlic paste and saute for 2 minutes till raw smell leaves. 4)Add in tomatoes, salt and cook that till mushy. 5)Saute the tomatoes till mushy. 6)Add in chilli powder, turmeric, garam masala powder and mix well. Cook the spices for few seconds till raw smell leaves. Add in cooked vegetables and mix well. Pro Tip: Take cauliflower, carrots, green peas and potatoes in a pressure cooker. Pressure cook for 2 whistle. Let the pressure release by itself. Set aside. 7)Mash the vegetables using a potato masher. 8)Cook till the mixture has dried completely. Add coriander leaves and mix well. 9)The potato masala is ready. Allow this to cool completely. Shape the potato masala into balls. Set aside.
Make Bun Dough
10)take warm water in a bowl. Add in sugar, dry yeast. 11)Sprinkle yeast over the warm water. Set aside for 5 minutes till the yeast gets foamy. 12)Add in plain flour, wheat flour into the yeast water. 13)Add in salt and mix well with the flour. 14)Now the dough is mixed. Add in soft butter and mix into the dough. 15)Knead the butter into the dough for 3 to 5minutes. Knead till the dough is soft. 16)Cover the dough with a cloth and let it rest for 1 hour till the dough is doubled in size.
Shaping Dough
17)Take the proofed dough into a silicon mat. Divide the dough into equal portions. 18)Take a portion of dough. Shape into small ball. 19)Flatten the dough into a disc. Place a spicy potato filling ball in. 20)Cover the dough into a ball.
Proofing buns
21)Place the buns in a baking tray. Cover with a cloth, let the buns rise for 30 minutes till it is doubled in size. 22)Brush the buns with milk or egg wash. Sprinkle with sesame seeds.
Baking Buns
23)Bake the buns in a 200 degree C preheated oven for 20 minutes. Remove and set aside for few minutes. 24)Brush the melted butter over hot buns. Brush the butter generously. 25)Serve. 26)Serve warm.
Expert Tips
You can use complete wheat flour instead of all purpose flour. You can make the filling and dough a day in advance and store in fridge. You can shape the buns next day and bake. Instead of using mixed veggies, you can use potatoes alone. Top shredded cheese over the filling and shape buns.
Serving & Storage
You can serve buns warm on its own or with some tomato ketchup. Leftover buns can be stored in fridge and reheated in microwave or oven for few seconds.
