Pumpkin Cake Truffles
Doesn’t chocolate just make life great? I love, absolutely LOVE, chocolate! I also love pumpkin cupcakes, so it’s time to combine the two! So here it is, the Pumpkin Cake Truffle! A moist pumpkin cake, combined with spiced cream cheese frosting, dipped in rich decadent chocolate, and sprinkled with assorted flavorful toppings! All that love in one bite-size piece of joy! These are wonderful for gift giving, party favors, or an IOMe (I owe me, of course).
How to Make Pumpkin Spice Truffles
These are the easiest fall treat, and the entire family can help. It starts by baking a pumpkin pie spice cake (or cupcakes). Once baked, you cool and crumble the cake into a large bowl—or use a food processor, hand mixer, or stand mixer to make it fast and easy. Next, you mix in your frosting. I like to lean into fall flavors and use a spiced cream cheese frosting container, but you can use any jar of frosting or your own recipe. Once mixed, use damp hands to shape the dough and chill or freeze them on a parchment paper-lined tray. I like to use a cookie scoop for uniform balls. Finally, dip your truffles in melted chocolate (use small cycles in the microwave to keep your chocolate from seizing). Dip your truffles, and then add any toppings before the chocolate sets at room temperature.
Truffle Variations to Try
Get creative with your ingredients and toppings for more fall fun!
Add some pumpkin puree to the cake & frosting mixture. In addition to melted chocolate chips, try white chocolate almond bark for dipping. Sprinkle truffles with cinnamon or pumpkin pie spice. Sprinkle with graham cracker crumbs. Sandwich between your favorite cookies. Dust with confectioners’ sugar. Add a scoop of protein powder to the dough.
They make for a great festive treat with Halloween just around the corner. Keep in mind the recipe makes about 85 truffles, so if you don’t have a need for that many feel free to cut the recipe in half. I got a two-for-one out of this by using the cake recipe to make two different recipes. I made the full cake recipe, poured half into a 9″ round cake dish (for the Pumpkin Cake Truffles), and poured the other half into 24 muffin cups (to make Pumpkin Cupcakes with Chocolate Ganache and Spiced Cream Cheese Frosting).
