Rava Idli
Rava idli is my favorite, i love it so much. But hubby is not a big fan of it. So i don’t make it often when hubby is around. But if i want to make some breakfast for myself alone. I am happy to give this a go. This is my no fail recipe for rava idli, it turns out to be soft and fluffy. I have already shared a vegetable rava idli recipe in my blog. This is my simple rava idli recipe and it best served with any chutney.
About Rava Idli Recipe
Rava idli is a popular south indian breakfast dish. It is an alternative for regular idlies and can be made in an instant. You could definitely see this dish in any wedding over here. Making of idli need several procedure like soaking of rice and dals for hours and then grinding it up and letting it to ferment overnight. But there is a easy idli dish that can be made with semolina. It hardly takes 15-20 min to make. Hope you all give this a try and let me know what you think.

Version 1: Rava Idli Recipe (with Fruit Salt)
Take sooji and yogurt in a bowl and mix well. Add salt and mix into a thick batter. Set aside for 15 mins.
After 15 mins the batter will be very thick. Now add in water to reach the perfect thick consistency like idli batter.
Make seasoning, by heating some oil and crackling in the spices. mix well..Pour it into the batter and mix well.
Add Eno salt and mix well. The batter will get foamy and light.
Now grease idli plate lightly with oil. If you are using cloth to line idli plates. Wet it completely in water. Spoon batter in and steam cook for 10 mins.
Now remove the plates from steamer and invert it on a plate. Carefully remove the cloth.Serve hot with chutney.

Rava /Sooji/Semolina-1 cup Curd-1 cup Rice Flour-½ cup Water as required Onion-1 chopped Carrot-1 grated Beans-3 chopped finely Green chilli-2 chopped Ginger-1 tblspn minced Curry leaves-1 spring Mustard seeds / Kaduku-1 tsp Cumin seeds / Jeera-1 tsp Salt to taste Baking Soda - 1 tsp Oil-1 tblspn Coriander leaves-3 tblspn
Method:
In a mixing bowl add rava,rice flour, salt, curd and mix well.Add in water as per needed and mix well.This should be a medium consistency batter (Not so thick,Not so thin).Set this aside for 15 min. Heat oil in a kadai and add in mustard and cumin seeds and let it crackle.Add in ginger and curry leaves. onion,carrots,beans and mix well. Let it cook for 3 min. Add this to the batter and mix well.Add in lots of coriander leaves and mix well. baking soda and beat well till it gets foamy and mixed in. Add a tbspn of the batter into well oiled idli stand or any small bowls and steam it for 10 mins.When it is cooked,remove it with a spoon and place it in a insulated box. Serve hot with any chutney or sambar.
