About Cajun Fried Corn
Cajun Fried Corn is a lip-smacking Southern-style snack with spicy, buttery flavors and some earthiness. It is an easy and quick recipe where sweet corn kernels are flavored with cajun seasoning, paprika, cayenne powder, chicken stock, and butter. This is how they make it in Missouri! This Southern Cajun Corn is a perfect summer snack when you crave something light and delicious. You can also serve it as a snack with your evening tea or coffee or as a munchie with cocktails or mocktails for your house parties. I sometimes serve it as a side dish with my Southern-style dinners. This recipe is super versatile. You can add other ingredients, like bacon dripping, to season it further or add heavy cream for that creamy texture. Once it is ready, you can also garnish it with crispy bacon. Yum! Ingredients
Sweet Corn – I used frozen corn kernels to make this recipe but you can shuck fresh corn and use the kernels. Cajun Seasoning – Make it home using my easy Cajun Spice Mix recipe, or buy a bottle. Cayenne Pepper and Smoked Paprika – Increase or decrease the amount depending on your taste. Butter – Butter adds a rich taste to this recipe that no other ingredient will do. Use salted or unsalted butter. Chicken Stock – Chicken stock makes the corn extra flavorful. To make the recipe vegetarian, use veg stock instead.
How To Make Cajun Fried Corn
Heat 1 tablespoon butter (salted or unsalted) in a skillet over medium heat. Once the butter is melted, add
½ cup chicken stock 2 teaspoon cajun seasoning ¼ teaspoon smoked paprika ¼ teaspoon cayenne pepper powder
and mix well. Add
3 cups of corn kernels ½ teaspoon salt ¼ teaspoon freshly ground black pepper
and mix well.
Reduce the heat to low and cover the skillet with a lid.
Cook for 10-12 minutes until the corn is tender and most liquid is absorbed. Stir a few times in between cooking.
Check for salt and pepper and add more if needed.
Serve hot.
Storage Suggestions
These Cajun Corn will last in the fridge for 3 to 4 days when stored properly in an air-tight container. Reheat them in a pan or microwave until nice and warm before serving.
