I made this korma few months back, Had it with Beans Biryani. I love to try out different varieties of curries to have with roti or pulav. This is one of the curry which came out so good and everyone in my house loved it. I even send some korma and pulav to my fiancée and he too loved it a lot. As you can see there is a long list of ingredients in this. But this is a perfect dish to make when you have friends coming around or having huge parties and stuff like that. Even though the recipe list looks a kind of complicated, once you start making, it will be a breeze. Hope you will enjoy this and join me again on another recipe. How to Make Soya Chunks Vegetable Kurma Recipe

Cooking Soya Chunks

Heat water in a sauce pan along with some milk. Add in soya chunks and switch off the flame. Cover the pan and let it rest for 15 mins. Drain it and rinse in cold water. Sqeeze off the extra water and set aside till use.  See this recipe for the step by step pictures of how to prepare soya chunks.

Making Kurma Base

Mix ½ cup of milk with cornstarch and set aside. Heat oil in a kadai. Add all the whole spices given in the list in the same order and let it sizzle for 30 seconds. Now add in onions and green chillies along with salt, sugar and ginger garlic paste.Fry this for 5 mins till the onion turn golden. Add all the spice powders in the given order and sauté for 30 seconds. Add in tomatoes and cook for 5 more minutes till the tomatoes turn mushy. Now add in peas, capsicum, beans and mix well. Add in cooked soya chunks and mix that as well.

Finishing the Kurma

Add in ground coconut paste and mix well. Pour in enough water and bring it to a good boil. Cover and Simmer for 15 mins until the peas and beans are cooked. Now add in the mixed cornstarch milk into the gravy and mix well. It will get thick and shiny. Garnish with coriander leaves and serve with rice or roti.
