What is Sticky Toffee Pudding?

Sticky toffee pudding, also known as sticky date pudding in Australia and New Zealand, is an English dessert consisting of a moist sponge cake prepared with finely chopped dates, topped with a toffee sauce and frequently served with vanilla custard or vanilla ice cream.

About Sticky Toffee Pudding

Sticky toffee pudding is nothing but baked dates sponge cake topped with a brown sugar butter topping which once baked create a self saucing sauce. This is one of the most loved and popular dessert all over the world. I love sticky toffee pudding so much, I have created a single serving date pudding and an eggless toffee pudding. Prunes can be used as a substitute for dates if you don’t have any on hand. They’re sweet, too, and the texture and consistency are perfect for this pudding. To provide contrast, top the sticky toffee puddings with a scoop of unsweetened whipped cream. It should not be eaten hot, but warm once the sponge has been topped with a sauce glaze and allowed to cool for 30 minutes, it will be at its ideal temperature.

Sticky Toffee Pudding Ingredients

Chopped Dates - The dates contribute to the sponges stickiness and moistness, as well as its colour. The fresh medjool dates are extra juicy and work wonderfully in this pudding. It makes the cake extra moist and soft. Brown Sugar - Brown sugar, give this pudding its sweet caramel like flavour. It is used in the batter as well as sprinkled on top to create the caramel sauce once the pudding is baked. Plain Flour - I used plain all purpose flour in this pudding which gives the spongy texture, but you can use wheat flour as well. Butter - you know butter makes everything better. when baked butter mix with the brown sugar to create a butterscotch flavoured sauce.

Make Sponge Batter

1)Preheat oven to 180 degree C. Grease a 20 cm square cake pan or 1.5 litre oval glass baking dish generously with butter and set aside. I am using a small jug to mix the batter, you can use a mixing bowl. This batter is so easy to make, all you need is to add all the ingredients in a jug and mix. Take brown sugar in a mixing bowl. 2)Add all purpose flour. You can use wheat flour instead of ap flour which will change the texture a bit but still it will be delicious. 3)Add in baking powder. This is the raising agent in this recipe. 4)Add in salt. This is important, it helps balance the taste of the cake. 5)Whisk till combined. Mix the dry ingredients first before adding the wet ingredients. 6)Add in one egg into the dry ingredients. 7)Pour in milk into the flour mixture. You can use regular milk or any dairy free milk. 8)Add a good splash of vanilla extract. 9)Add melted butter or oil into the batter. 10)Mix this gently using a wooden spoon or a spatula. 11)Add in chopped dates. Instead of dates you can use prunes as well. But dates provides the sweet sticky nature. 12)Fold the dates into the batter.

Baking the Sponge

13)grease a baking dish. I am using a 1.5 litre oval baking dish. You can use a 20 cm square cake pan for this recipe. 14)Spoon batter into the baking dish. 15)Spread evenly using a spatula.

Create Sauce for the Cake

16)Sprinkle some brown sugar over the batter which results in creating the sauce. 17)cut out small portions of butter and sprinkle all over the brown sugar. 18)Carefully pour the boiling water over the brown sugar. 19)Place this in a baking sheet and bake in centre of oven for 45 minutes. 20)Now it is baked. 21)Serve.

Expert Tips

You can use wheat flour instead of plain flour which alters the texture but still taste great. You can add oil instead of butter in the cake batter. But use butter for topping the sponge. Use boiling water for pouring over the sponge and not tap water.

Storage & Serving

Sticky date pudding can be served with a scoop of vanilla ice cream and a drizzle of butterscotch sauce or caramel sauce. Baked dates cake can be stored in an airtight container at room temperature up to 3 days. It can be refrigerated up to a week. Warm the cakes in microwave for few seconds before servings. You can reheat the butterscotch sauce to serve with the cakes.
