Sweet Diamond Cuts
Looking for easy and fast snack ideas for Diwali, I would say this is the recipe. I made it in minutes and it tasted so good. This is a sweet diamond cut recipe, I have already shared a spicy version before. This is a crispy fried snack, which is coated in a sugar syrup. Once you add the fried diamonds into the sugar syrup, I like to toss it really well on high heat which cooks really well, to create a sugary crust over them. Some people add powdered sugar to the fried dough, but I prefer it this way. It is more tasty.
About Diamond Cuts (Sweet)
Diamond cuts recipe, is made with plain flour, salt, ghee and water. It is one of the easy and popular snack recipe from Southern part of India. This is called as diamond cuts, maida biscuits or kala kala. This recipe can be made sweet or spicy deepening on the ingredients you use. This recipe can be made as evening snack to serve with a cup of coffee or tea, or you can make this for Diwali, Krishna Jayanthi or any special occasions. Diamond cut dough is made with plain flour, salt, ghee and water. Depending on the version you are making, you add spice powders or sugar. If you are making spicy diamond cuts, chilli powder, asafoetida, cumin seeds or ajwain is added. Similar recipes to this is shakarpara. Sweet diamond cuts is made with the same dough. Once the diamonds are fried, it is either coated in sugar syrup or dusted with powdered sugar. I prefer coating them in sugar syrup which creates a thick sugary coating and stays crispy longer. In my opinion coating the fried diamond cuts in powdered sugar can make them soggy and make the sugar sticky as it sits.

Sweet Diamond Cuts Ingredients
All Purpose Flour - I used plain flour or refined flour for making the dough. If you want, you can use wheat flour instead of plain flour. The texture might vary a little, but it will still be delicious. Salt - even though this is sweet version, a small pinch of salt is added in the dough for flavour and taste. Ghee or Butter - I add a little bit of ghee, butter, or oil is added into the dough which shortcrust the dough and makes it crispy when frying. Water - the dough for diamond cuts has to be stiff and not soft. Stiff dough makes crispy diamond cuts while soft dough makes it slightly soggy. Sugar - Once the diamonds are fried, it is either coated in sugar syrup or dusted with powdered sugar. I prefer coating them in sugar syrup which creates a thick sugary coating and stays crispy longer. In my opinion coating the fried diamond cuts in powdered sugar can make them soggy and make the sugar sticky as it sits. Oil - always use neutral oil which is flavourless like refined oil, sunflower oil, safflower oil.

How to Make Sweet Diamond Cuts (5 Easy Steps)
Making Dough - Take flour, salt, ghee in a bowl and rub with your fingers till it resembles a coarse crumb. Add water slowly and knead to a dough. Let it rest for 30 mins or so. Rolling & Cutting - Now take a small portion of dough and roll it little thin. Now cut it into small diamond shape. Frying - Heat oil for deep frying, drop the diamond in hot oil and fry till golden. Drain and set aside. Sugar Syrup - Now make the syrup. Heat sugar and water in a pan, mix well till sugar is melted, now boil it and cook till two string consistency. It will be thick. Coating Diamond Cuts - Now add the fried diamond cuts in this and coat it well. As it cools the sugar will harden. Cool this completely and store it in an air tight container. This stays good for 2 weeks.

How to Make Sweet Diamond Cuts (Stepwise Pictures)
Making Dough
1)take plain flour in a bowl. If you wish to use wheat flour, you can use whole wheat flour too. 2)Add some salt into the dough. Even though this is a sweet recipe, you need to add a pinch of salt. Mix the salt evenly into flour. 3)Add in a spoon of ghee, butter or oil. 4)Rub the ghee into the flour using your hands. This technique is called as shortcrust. 5)The mixture resembled breadcrumbs like texture. 6)Now pour in enough water to make a stiff dough. Knead the dough for at least 5 minutes. 7)The dough has to be stiff and smooth. Cover the dough with a lid or damp cloth and allow it to rest for 30 minutes.
Rolling & Cutting Diamond Cuts
8)Take a portion of dough on a work surface and roll it using a rolling pin. 9)Roll it thin, if you roll it too thick, then the fried diamond cuts will be chewy. 10)Once the dough is rolled, use a pizza cutter or knife to cut into small diamonds. 11)Now the dough is cut into diamonds. 12)You can easily remove it with your hands. For more crispy texture, you can allow them to air dry for few hours.
Frying Diamond Cuts
13)Use a spatula to remove the cut diamond cuts. 14)Add the diamond cuts in hot oil and fry till golden brown. 15)Now the diamond cuts is fried till crispy and golden brown. 16)Strain the fried diamond cuts into a bowl. This taste delicious as it is.
Sugar Syrup
17)Take sugar and water in a pan. Heat on medium high heat till sugar melts. 18)Cook sugar and water till it gets super thick. It has to get nearly 2 string consistency. 19)As you can see the sugar syrup is thick.
Coating Diamond Cuts in syrup
20)Add the fried diamond cuts in the sugar syrup and keep tossing in the syrup so the sugar syrup coats each diamond cuts. 21)As you keep coating the diamond cuts the sugar will harden over the fried. 22)Now it has coated well. Remove this to a tray and allow it to cool. As it cools the sugar will harden even more creating a thick coating over the diamond cuts. 23)Serve.
Expert Tips
You can use wheat flour instead of refined flour. For even better texture, use half wheat flour and half refined flour. Using ghee, butter in flour when kneading the dough gives crispy flavour and texture when frying. If you don’t bother making sugar syrup, you can just add few spoons of icing sugar or powdered sugar to the fried diamond cuts. You can flavour the sugar syrup with some cardamom.Chopped fried nuts like cashews, almonds can be added to the sweet diamond cuts.
Storage and Serving
Sweet diamond cuts can be stored in an air tight container for 2 to 3 days. Enjoy sweet diamond cuts with a cup of green tea or black coffee.
