Food used to be quite an attraction on our Thailand visits. Winding down the lanes of Chatuchak market and sampling the satays and curries from the roadside vendors was quite an experience. During one of those trips, I came across their sweet iced tea with a deep orange hue from color-coated tea leaves. The sweetness from the condensed milk hit differently; it soon became our usual. It is now a regular in my house, and when the mercury soars high in the summer, it is a delight to sip on.

How To Make Thai-Style Iced Tea
Add 2 cups water, 2 green cardamoms (crushed), and 1-inch piece of cinnamon (crushed) to a pan and boil over medium-high heat. Don’t be disheartened if you cannot source this tea. Any black tea will do in this recipe. You can add a few drops of vanilla extract and one-star anise to make the taste closer to the real deal, and the color will not affect the taste. Spices – The tea is flavored with spices like cinnamon and cardamom. When added to boiling water, they release a nice flavor and aroma. Condensed Milk – Thai tea is sweetened with condensed milk. You can easily find sweetened condensed milk in your nearby grocery store. Sugar – You can adjust the amount of sugar in this drink according to your taste. Do not go overboard, as condensed milk is also sweet. Sometimes vanilla, orange blossom water, and crushed tamarind seeds are added. Some people add boba pearls to it, and then it’s called bubble tea. Once the water comes to a boil, switch off the heat. Add 6 teaspoon Thai tea mix and 2 tablespoon sugar and steep for 5 minutes. Strain the tea in a measuring cup using a tea strainer. Let the tea cool down for 10 minutes. Add 7-8 ice cubes each into two tall serving glasses. Pour the tea over ice until the glasses are ¾th full. Add 2 tablespoon of sweetened condensed milk to each glass. Stir well using a stirrer and serve. Note – Add more sugar if you like sweeter tea.
