Watermelon Rice Krispies Treats
We are huge Rice Krispie treats fans around here (and we’re always adding in extra marshmallows!). And can we talk about the fact that it’s actually Rice KrispieS treats with an “s”? We’ve never said it that way. It just doesn’t sound right. It won’t really matter what you call these tempting chewy treats though. They are so delicious!
How to Make Watermelon Rice Krispie Treats
I love how easy these are to make. You do need to make the marshmallow filling twice since you’ll be making different colors but other than that it’s a breeze!
Spray a 9-inch round cake pan with non-stick cooking spray, and set aside. For the rind portion, melt 1 1/2 Tbsp butter in a medium non-stick saucepan over medium-low heat. Add 2 1/2 cups marshmallows and green food coloring and cook and stir just until marshmallows have melted. Remove from heat and in 2 cups rice krispies, stir until evenly coated.
Pour into prepared baking dish and let cool just slightly (so it’s not too hot to the touch), spray hands with non-stick cooking spray and spread and press mixture around the outer edge to create a rind that is no more than 1-inch thick (don’t over-press so they stay nice and chewy). Clean and dry the saucepan then for the center portion melt 2 Tbsp butter in the saucepan over medium-low heat.
Add 3 1/2 cups marshmallows and pink or red food coloring and cook and stir just until fully melted. Remove from heat and stir in 3 cups of rice krispies. Pour into the center of the cake pan and once cool enough to handle spray hands with non-stick cooking spray and spread into an even layer. Let cool then sprinkle and press chocolate chips randomly over the pink portion. Cut into wedges.

I opted not to flavor these with watermelon flavor (I’ve seen it done with and without). I bought a real watermelon flavor online and it tasted and smelled like nothing like a real watermelon (more like artificially flavored and scented lip balm) so I’d rather just stick with the plain flavor. You just can’t go wrong with the classic. These fun treats are a great way to celebrate the beginning of summer so make them soon, whether or not you’ve got kids at home. No matter your age you know you want one :).
