Jaggery is a non-centrifugal cane sugar that is traditionally consumed in the Indian Subcontinent, Southeast Asia, and Africa. It is a concentrated product made from cane juice and often date or palm sap, with no separation of molasses and crystals, and its colour ranges from golden brown to dark brown.
