Yeasted Belgian Waffles Recipe
I have tasted waffles in so many cafe, I wonder how they are made because the waffles are so light and so fluffy. Finally I figured out the recipe and the secret ingredient is yeast. The one thing which you have to do is preparing the batter a day in advance. I usually make the batter the night before and make waffles in the morning.
About Yeasted Waffles Recipe
Today’s recipe is going to be a delicious crispy yet soft waffles. I have made so many waffles recipe in the past but this one is my favourite because it tastes similar to the store bought ones or the ones which you buy in a Cafe. This waffle batter is made with flour, sugar, milk, butter and yeast. The crispy texture is achieved by the baking soda and the egg which we add just before making the waffles. I used my nonstick waffle maker to cook the waffles but if you have a cast-iron then the waffles would be super crispy. Make sure you make the batter early so it has time to fermant. This waffle is not an instant recipe you have to plan ahead and make it a day in advance. Because the Batter has to ferment for for few hours. What’s the Difference Between Belgian and Regular Waffles?
Belgian waffle usually has yeast as the leavening agent.This waffle is usually made in a special Belgian waffle iron which has deeper pockets.Belgian waffles is usually crispier than regular waffle.
Fermentations of the Batter
Belgian waffle is not the instant kind it has to be made a day in advance preferably overnight. Letting the Batter ferment overnight gives the yeast a chance to activate also the milk added in the Batter ferments slightly and gives sour taste to the waffles. Just make sure to use a large container, as the batter more than doubles in size as it rises overnight.
Belgian Waffles Toppings
Various toppings can be used when serving the waffles. Some of my favourite toppings are
Powdered sugar dusting for a little bit of sweetness.Drizzling maple syrup or honey is one of my favourite. Just make sure you warm up the maple syrup a little before serving.Fruit compote can be served with the waffle. Fruits like strawberries, raspberries, peaches can be used as per your taste.Chocolate spread can be applied over the waffle. This will be a favourite with your kids.Peanut butter is a good option too.Fruit jams and extra butter make a simple and delicious breakfast option.

How to Make Yeasted Waffles
Batter Preparation a Day in Advance
Take flour, yeast, sugar, salt in a bowl. Add in milk, melted butter and mix really well. Cover and leave it to ferment overnight. I like to prepare the batter right before going to bed and make the waffles in the morning. The batter has to ferment at least 8 hours. Use a large bowl for making the batter since it has yeast the batter will rise a lot.
Waffle Batter
In the morning right before you make the waffle add an egg and baking soda into the batter and mix it really well. The batter will get even fluffy and light.
Cooking Waffle
Heat a waffle maker brush it generously with some melted butter or oil. Pour a ladle full of batter in the waffle maker, cover and cook for 5 to 6 minutes till the waffles or crispy and golden.
Serving Waffles
Remove it from the waffle maker and serve hot with a drizzle of maple syrup or honey.

What If I Didn’t Make the Batter the Night Before?
If you’re craving waffles and you forgot to make the batter the night before you can still make these Belgian waffles and eat them right away! Make the batter, Let it sit at room temperature for an hour instead of overnight, and then proceed with the recipe.
How to Store leftover Batter?
Cover the batter container with plastic wrap and place it in the fridge; it will hold for up to 24 hours in the refrigerator. Bring it back to room temperature when you are ready (about an hour on the counter) and then proceed with the recipe like normal.
Tips & Tricks
For a fuss free breakfast option. Make the batter a day in advance. So you can whip up waffles in no time. This waffles can be cooked and stored in fridge upto 3 days. Reheat it in oven or toaster for making it crisp again. You can increase the sugar quantity for more sweet waffles.
Freezing & Storage
These waffles also freeze very well! Let them cool completely, the stack a few of them on top of each other and wrap tightly in aluminum foil. Place all your waffle packets in a freezer bag, squeeze out as much air as possible, and freeze for up to a month.
